Fabio Pisani and Alessandro Negrini are the young chefs who have taken up the baton of the Aimo e Nadia restaurant in Milan. Together with Stephanie, the daughter of Aimo and Nadia, today they are the heirs of an unique combination of modern taste with rich culinary history.
Fabio and Alessandro will participate in the new project organized as part of the Milan Design Week to host more than 130,000 visitors in the neighborhood: the MI Gusto Tortona – Farmer & Gourmet Experience, organized by Tortona Area Lab together with CIA (Italian Farmers Confederation), in collaboration with FAI and Comieco.
The two star chef of the restaurant will cook one of their dishes, made with some raw materials from the farms participating in the project. You will find them all day long onboard the ARCA by Inox Plus located in Via Bergognone at the corner with Via Tortona. It will be an opportunity to sample the signature cuisine to the general public, that each day will be able to taste dishes by different chef, contributing to develop the potential of an area that demonstrated a great attention to good food and cuisine in its recent and past history.
The dish proposed for the initiative will be a Carnaroli risotto with Pantelleria capers, tomatoes, lemons from the Amalfi Coast, Mancianti Affiorato oil and Ligurian Sea shrimp souce.
